Grilled pineapple is just so effin fabulous!

I think the first time I had grilled pineapple was at a Brazilian steak house, and I swear it blew my mind! Pineapple, with brown sugar, grilled? BRILLIANT! It was a bit of a why haven’t I don’t this yet moment for me.

Now, regardless of occasion, any time I find a ripe pineapple I bring it home and grill the sucker. It’s a great and mildly healthy dessert option for kids or adults. It’s quick and easy – no grill – no problem, bake it. Perfect for summer cookouts or picnics. It’s so yummy and goes with just about anything. I like it on pancakes, on my daliya, by itself, with ice cream, or even with cardamom saffron rosewater custard.

As I’ve said in other posts, I really don’t remember eating fresh pineapple in India, which is shocking. You’d think it would grow perfectly there. Maybe it was always there and I was too mango and lychee obsessed to notice? Regardless of the situation, I’m quite grateful to have yearly access to beautifully ripened pineapples. As a side note, even if the pineapple isn’t perfectly ripe throwing some sugar and cinnamon on it will help bring out it’s perfection.

Ingredients

  • Whole pineapple, sliced

  • 12 tbsp brown sugar

  • 2 tsp cinnamon

Directions

  • Prepare your grill.
  • Skin, and thickly slice the pineapple. You can core them if you”d like, I just find it easier to grill the slices if they aren’t cored.
  • Arrange the slices of pineapple on a baking sheet.
  • Evenly coat the pineapple with brown sugar. (Approx. 1 tbsp per slice)
  • Lightly sprinkle cinnamon on pineapple.
  • Place the pineapple slices on to the grill and cook until grill marks appear on both sides and sugar has lightly caramelized. Approximately 2-3 minutes per slice.
  • Remove from grill and serve.
