Paneer bhurji, breakfast, lunch, or dinner, it’s perfect for every day.

There are few things in this world that are as simple and delicious as paneer bhurji. Creamy fresh paneer sauteed with onions, ginger, savory herbs and spices. It’s a tasty dish whether you want to eat wrapped up in a parantha or my favorite, as part of a patty sandwich. I’m sure somewhere some blog is pontificating about how their great great grandfather invented this dish or that it signifies the moment a boy became a man…I’m here to tell you all of that is absolute horse poo. Paneer bhurji is rustic Punjabi cuisine at it’s best.

Growing up, we always had fresh paneer in the house. It’s a staple when you have your own personal buffalo. Well not my personal buffalo but a family buffalo, so same same. Either way, the buffalo was milked and paneer was made. From there yea, the options were endless, from paneer paranthas, to sabji, tikkas, pakoras and more. But nothing was made more than paneer bhurji. It’s authentic Punjabi farm food in it’s truest sense. It’s fast, hearty, and delicious. Not a lot of fancy spices, ingredients, or cooking techniques. Just fresh and delicious ingredients stir fried together.

Something about bhurji makes me think about coming home from school in the summers and being absolutely famished. And sitting for those few minutes before homework or tuitions and eating patty sandwiches with bhurji in them and drinking cold coffee. In those few moments life was perfect. Then it was time to slog again and it all sucked.

Ingredients

  • 2 tbsp ghee or vegetable oil

  • 2 tbsp cumin

  • 1 onion, minced

  • 2 tbsp ginger, minced

  • 2 chili peppers, minced

  • 1/2 tsp turmeric

  • 1 tsp garam masala

  • 1 lbs paneer, crumbled

  • Salt, to taste

  • 1/4 bunch cilantro, minced

Directions

  • In a large skillet, heat ghee over medium heat.
  • Add cumin and saute for 2 minutes, or until golden brown.
  • Add in onion and saute until golden brown. Approximately 5-7 minutes.
  • Add in ginger, chili peppers, and saute for 2 minutes.
  • Stir in turmeric and garam masala.
  • Add in paneer and stir to thoroughly combine the mixture.
  • Continue to cook for 5 minutes.
  • Salt, to taste and add in cilantro. Cook for an additional 5 minutes.
  • Serve immediately.
