Mango season is upon us and it is not to be taken lightly. Kick off the season with these amazing mango yuzu vodka Popsicles.
These Popsicles are fresh, light, and absolutely delicious. Obviously make sure to use ripe mangoes to ensure that sweet mangoey flavor that we all love and can’t get enough of. Mango yuzu vodka Popsicles are fruity, refreshing, and delicate in flavor, which isn’t something you’d traditionally describe a Popsicle as, especially one with alcohol. I’m not a huge fan of traditional alco pops because inevitably there’s way too much booze in them and they just don’t taste great. These however are balanced and make it a yummy treat versus a vodka ice cube. My favorite part about these ice pops other than the flavor profile is that they never freeze rock hard, thanks to the fruit content and the vodka.
If you’ve never tried yuzu before, let me begin by saying, you’re missing out and need to get on it. If you happen to not have access to it, you can easily swap them out with key limes. Beyond that there’s no great secret to making these Popsicles or any Popsicles for that matter. It’s literally putting fruit in a blender than freezing it. When it comes to summer recipes I can’t stand overly complicated ones. The weather is brilliant and meant to be enjoyed. Not to mention, a hot stove in summer is akin to sticking a needle in your eye. So get yourself some boozy pops and make an afternoon of it. If you have non drinkers, just leave out the vodka and the summer treat is still spectacular.
